A shame Sherry had to log, she probably knows the most FR lore out of the DM team!
I would say, though, that you should just read the dogma and decide for yourself. You can play your cleric however you like, and I personally don't mind odd takes on the dogma. If you stretch it too much, though, we'll probably give you a poignant warning IG, then if you continue you'll get spellfailure. It'd have to be a pretty extreme betrayal of the dogma though!

Does talos focus more on Physical destruction, or the destruction of long standing ideals, like law and that annoying response, "Because it's always been done this way."

Do that if you want, it's within the bounds of his being a chaotic destructive deity. It's just not a specific focus, nor readily mentioned in his dogma.
