My wife and I have avid interest in adoption.

Who should I speak to regarding such?

I am hoping for a male, between the ages of five and seven as our last son was sadly lost due to disease when he was but six. We've still many of his toys and clothes, my wife has a sad attachment to them I'm afraid. Re-filling them would to wonders for her emotional and mental health, as a child would do well to help her.
