Can dominating undead be -optional- liked acessed through the crafting menu? I follow a nature god and DOminating undead isn't quite what I am after.

No, if you follow a nature diety and turning is not for you, you can always just destroy them the good old fashioned way. The turning mechanism is tied directly to your alignment unfortunately, not to your diety.
