Because she is -chaotic- good, for one. Most importantly, because she probably wouldn't even want them. One thing paladins are not, are free spirits. They live according to a strict code. How could Selune possibly even agree with the basic principals of what it is to be a paladin?
If you are wondering which dieties do have paladins, CheezIt put a nice list up to make it easy for everyone. Selune is not on it.
Felt like I should write this. No particular reason...

Even those who are exceptions just don't work for me.
As a priestess and Heartwarder of Sune I al-ways clashed, with all of "my" paladins.. I just couldn't see Sune have paladins. Now mayhap they were playing wrong. Or I was. Doubt it though xD
But well, I abide by the rules.
And good to see no more Banite or Luthic paladins and whatnot . .

Well I am pretty sure that Paladins of Sune aren't the smite evil kind. They seek out and protect all things of beauty from those who would destroy them or deface them. I think that's their whole mission.
Same with Paladins of Mystra. They do things like delve deep into strange places, nullifying dead magic zones and battling against those that would upset the balance of the weave.
Not quite the same as Ivandurs "steel boot of justice"

With that explanation you can neatly excuse paladins of pretty much all deities though.
The huge feral hulking and drooling orc in shining plate who merely exists to protect the female orcs in his tribe by dismembering all good aligned heroes with his great axe who battle the "orc threat" is hereby a paladin of Luthic?
