But do they stack? If you cast PfE and PfG, are you protected vs. both good and evil, or is it just one - and if so, which?

This is a mechanics question, so please don't say "foig", as it's something any level zero apprentice should know.

Both! One offers bonuses versus good, one offers bonuses versus evil, so when you cast both, you're protected against good and evil.
